Sardine spaghetti / Spaghetti z sardynkami

easy peasy, quick and frugal sardine spaghetti

Me and fish? It’s very rare! I saw this recipe in one of food magazines and thought why not give it a go? I’m happy I did! It’s super delicious, simple, easy to make and frugal, so you don’t have to spend fortune!

  • 300 g spaghetti
  • 1 onion, finely chopped
  • 1 garlic clove, chopped
  • 1 tbsp olive oil
  • 10 cherry tomatoes, roughly sliced
  • 1-2 tins of sardines in oil, boneless and drained
  • 10 green olives, sliced
  • 1 tbsp capers
  • 2 tbsp of finely chopped parsley (or 1 tbsp dried parsley)
  • salt & pepper, to taste

Methods of preparation:

Cook the spaghetti according to instructions on the packet, drain and set aside. In a medium frying pan heat olive oil and add onion, cook until soft and transculent over medium heat. Add the garlic and tomatoes and cook for further 5 minutes. Stir in drained sardines, add olives and capers, season with salt & pepper if needed and cook for around 3 minutes. Toss in the drained spaghetti, garnish with parsley.

Good for you – we don’t eat hardly enough fish. Sounds great but don’t think I could convince my family to eat sardines.
