I used to eat a lot of salads and I’m not talking salads with lots of lettuce and crispy veggies, I’m talking about heavy salads with a lot of mayo and sometimes weird combination of vegetables / meats. This is basically what ends up on every Polish table during some kind of celebrations either “name day”, birthdays, Christmas, Easter, housewarming parties – you name it!
Broccoli, feta cheese and ham salad
- 1 medium broccoli, florets separated
- 200 g good quality feta cheese, crumbled
- 80 g sweetcorn
- 180 g honey cured ham, roughly chopped
- salt & pepper, to taste
- 1 tbsp garlic sauce
Cook broccoli in a medium saucepan, in lightly salted water, let it drain off excess water and set aside. In a salad bowl mix together sweetcorn, chopped ham, cooked broccoli, sprinkle with crumbled feta cheese. Season to taste with salt and pepper. Add 1 tablespoon of garlic sauce and mix until all ingredients are combined. Serve straight, when cauliflower is still warm or cold.
