Sometimes I struggle when it comes to breakfast ideas and don’t get me wrong I like porridge, open sandwiches and full English but sometimes I crave for something different. I remember my Mum making delicious and fluffy fritters called “racuchy” with apples so I thought this is it, I have to make them. Going through the fridge I’ve noticed a pack of twarog (curd like cheese). Apples and curd cheese are a great combo, trust me on that one!
APPLE & CURD CHEESE FRITTERS
- 250 g Polish white cheese – twaróg (available in Tesco or Polish shops)
- 2 small apples
- 1 large egg
- 2 tbsp vanilla sugar (use white sugar to substitute)
- 1/2 tsp baking powder
- 5 tbsp plain flour
- sunflower oil for frying
Peel and grate the apples, set aside. In a medium bowl mix together – white cheese, egg, sugar, baking powder and plain flour. Add grated apple and mix well until all ingredients are well mixed together. Spoon 1-2 tbsp of apple and cheese mixture in your hand and roll into small ovals. In a medium pan heat up sunflower oil, add fritters and fry until golden brown on both sides.
