Me and fish? It’s very rare! I saw this recipe in one of the food magazines and thought why not give it a go? I’m happy I did! It’s super delicious, simple, easy to make, and frugal, so you don’t have to spend a fortune!


Sardine Spaghetti
Ingredients:
- 1 box of spaghetti
- 1 onion, finely chopped
- 1 garlic clove, chopped
- 1 tbsp olive oil
- 10 cherry tomatoes, roughly sliced
- 1-2 tins of sardines in oil, boneless and drained
- 10 green olives, sliced
- 1 tbsp capers
- 2 tbsp of finely chopped parsley (or 1 tbsp dried parsley)
- salt & pepper, to taste
Methods of preparation:
Cook the spaghetti according to instructions on the packet, drain and set aside. In a medium frying pan heat olive oil and add onion, cook until soft and translucent over medium heat. Add the garlic and tomatoes and cook for further 5 minutes. Stir in drained sardines, add olives and capers, season with salt & pepper if needed, and cook for around 3 minutes. Toss in the drained spaghetti, and garnish with parsley.
